Beef & Beet Salad

I’m always in search of good salad recipes that are also healthy.

And this one was absolutely a winner.

For those manly men in your life that love a good steak, they’ll love this salad too.


The Key Is Roasting The Beets

So many of my clients have mentioned to me before that they aren’t fans of beets, then when I show them how to roast beets like this, they simply can’t get enough!

The sweetness of the beets comes out, and added to the slightly spicy arugula, this salad is a winner!


It’s great for lunch and also for dinner.


The Cheese Touch

If your fam is not a fan of goat cheese in your salad recipes, no problem!

Feta cheese would be great in this one or even parmesan cheese!


This super simple recipe is a hit in my house (my hubbs likes it with parmesan and a little extra black pepper)!

Beef & Beet Salad


  • 3 oz cubed beef chuck
  • 1/2 cup arugula
  • 1/2 cup roasted beets
  • 1 tsp olive oil, divided
  • 2 tsp balsamic vinegar
  • 2 tsp dried thyme
  • 1 tsp goat cheese
  • 1 tsp steak seasoning
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • sea salt
  • black pepper


  1. Preheat the oven to 450 degrees
  2. Wash and peel your beets
  3. Cut beets into cubes and place on a baking sheet
  4. Coat beets with 1/2 tsp olive oil, salt, and onion powder
  5. Roast for 15-18 minutes until soft and darkened on edges
  6. Coat your steak with steak seasoning, smoked paprika and salt
  7. Cut into cubes
  8. Turn skillet on medium high heat and add in remaining olive oil
  9. Add garlic and saute until soft and golden brown.
  10. Add in steak cubes and cook until golden brown all over.
  11. On a plate, add your arugula and top with thyme and balsamic vinegar
  12. Add your roasted beets and beef
  13. Crumble your cheese over the top of the salad
  14. Enjoy!
