The Key Is Roasting The Beets
So many of my clients have mentioned to me before that they aren’t fans of beets, then when I show them how to roast beets like this, they simply can’t get enough!
The sweetness of the beets comes out, and added to the slightly spicy arugula, this salad is a winner!

Feta cheese would be great in this one or even parmesan cheese!
