Egg White Mexican Omelet

This simple, healthy breakfast is one that you can easily cook and take on the go, or enjoy on the weekend when you don’t want to fall off your eating plan, but you want something super flavorful that everyone will love!

For those of you in the ROCKIN’ BODY Society, this is a 2 Unit meal. Completely balanced at 2 Units of Protein, 2 Units of Carbs, and 2 Units of Fat.
This super simple omelet is delicious and packed full of Mexican flavor. You can even serve it topped with my famous Pico de Gallo recipe.

Egg White Mexican Omelet


  • olive oil cooking spray
  • 1/2 cup chopped green pepper
  • 1/4 cup jalapeno, seeded and diced
  • 1/4 cup chopped onion
  • 2 egg whites
  • 1 tsp shredded cheese


  1. Spray small skillet with cooking spray.
  2. Saute the peppers and onion over medium heat until just tender.
  3. Pour 2 egg whites over vegetables and add 2 tbsp water.
  4. Cook eggs, using spatula to lift the sides to allow uncooked eggs to run underneath the cooked parts.
  5. Once the egg whites are set on the bottom, add cheese to one side and fold the egg over itself.
  6. Lower heat and cover and cook for 1 minute.
  7. Top with Pico de Gallo recipe and enjoy!!
