Healthy Black Bean and Rice Tacos

Need Some Summer in the Fall??
 I know Fall is creeping in in most states and cool weather clothes are starting to come out of storage. But here in Texas it is still 90 degrees outside!
Now, I LOVE me some chili, especially the made from scratch version that my dad created. (I will have to share that recipe soon, I promise I will).
But today, I wanted to share a delicious recipe that would be great for Summer or Fall, and if you are a Texan like me, it’ll help you beat the heat! This is seriously my favorite recipe right now, I’ve been craving it. And trust me, I will be eating it all through October, November and December. YES it’s that good! It’s meatless, so why not make it for a Meatless Monday or something? I got it from the Beachbody Ultimate Reset and I seriously can’t stop eating it. It’s incredible and healthy and you wouldn’t even know it because it tastes so dang good!
Black Beans and Rice

Ingredients:


  • 3/4 cup cooked brown rice
  • 1/2 cup canned low-sodium black beans
  • 1/4 tsp. extra-virgin olive oil
  • 1/8 tsp. ground chili powder
  • 1 pinch ground cumin
  • 1/4 tsp. ground coriander
  • 1 tsp. low sodium soy sauce
  • Himalayan salt (to taste)
  • 1/4 cup fresh corn
  • 2 tbsp salsa
  • 1/4 cup guacamole
  • 1-2 6-inch corn tortillas

 

Directions:


  • While rice is cooking, heat beans gently in saucepan until very hot.
  • Drain and return to pan.
  • Add olive oil, spices, soy sauce, and Himalayan salt. Stir well.
  • Gently fold beans and corn into cooked rice.
  • Stuff into corn tortillas and serve with a side of salsa and guacamole. Serves 1.

This recipe is so incredible. It’s a little spicy, a little sweet. And it fills your belly with warmth just like a bowl of chili on a cool Fall evening. But it still gives you all the bright flavors of Summer so you can hang onto it for just a little longer! (And the best part? You don’t have to worry about your waistline!)
