The best part about this Paleo 3 Ingredient Mug Cake is that it satisfies a sweet tooth, AND it is healthy.
That was the challenge for me.
I heard my clients loud and clear- WE CRAVE CHOCOLATE!
And no amount of kale chips in the world will make up for that rich, chocolatey flavor.
I totally get it. (although I crave fruity gummies, so that’s a whole other beast)
SO HOW TO KICK THE CHOCOLATE CRAVING?
Well, eat chocolate, of course.
(I bet you chocolate lovers LOVE that answer!)
But how do we keep it healthy?
Well, we keep it with quality ingredients only. Simple and sweet. (literally)
Paleo recipes lend themselves to having quality ingredients ANYWAY.
Here we don’t have to worry about grains or gluten.
We focus on protein and healthy fats and non starchy carbs.
I CAN SO DO THAT.
So I began thinking of textures, and how to infuse the chocolate flavor and cake fluff without needing flour or grains.
And after crap tons of research on substitutes in baking…
this is the fabulously, rich and high in protein recipe.
And yes, it is a winner with my 8 year old as well.
