Quinoa Shrimp Cocktail For Quick Prep

If you love quinoa and you love super quick healthy meals, this recipe is for you! Full of fat burning foods, this tart, Asian inspired quick meal is a winner.

You can even bring it to work with you in a mason jar, so it’s meal prep friendly as well!


All you need to do to make this super easy is cook the quinoa in advance.

Then the night before, cook up the shrimp (takes minutes!) and add everything to the bottom of the mason jar.  Top it off with the quinoa and BAM. You’ve got your healthy lunch packed and ready to go.

Quinoa Shrimp Cocktail


  • 1 cup lettuce
  • 4 oz cocktail shrimp
  • 1/2 cup quinoa
  • 1 tbsp chopped cilantro
  • topped with Peanut Lime Dressing


  1. 1/2 cup dry quinoa cooks with 1 cup of water over medium heat.
  2. Bring to a boil and reduce heat, cover and let simmer until all the liquid is drained and quinoa is fluffy.
  3. Top lettuce with this quinoa, and add the shrimp and cilantro.
  4. Dressing can be placed on the bottom of a mason jar, then the shrimp, then quinoa, then lettuce for the perfect transport without the lettuce getting soggy!
