HOW TO MEAL PREP THIS RECIPE:
All you need to do to make this super easy is cook the quinoa in advance.
Then the night before, cook up the shrimp (takes minutes!) and add everything to the bottom of the mason jar. Top it off with the quinoa and BAM. You’ve got your healthy lunch packed and ready to go.
