Refreshing Cuke and Tomato Salad

This is one of my favorite healthy snack ideas to date. I CRAVE THIS STUFF.

My son and my husband crave this salad as well, so that’s how you know it’s a real hit!

 

The best part (even more than my picky eater approval) is that this cucumber and tomato salad can be used as a snack, a meal prep recipe, a side dish to lunch, or with a little tuna added can be your complete meal!

 

I think it’s the refreshing, summertime flavors of cucumber and tomato combined. (especially if you use home grown veggies!)

It could also be the tart vinegar and the soft, sweet taste of the dill.

(The dill is definitely the secret pop ingredient to this recipe!)

 

It’s super simple to make, can be chopped, mixed and packed all in under 5 minutes, and keeps for at least a week, only getting tastier as it sits!

For those of you in the ROCKIN’ BODY Society, this recipe is 2 Units of premium carbs! Add to 2 Units of protein- (maybe the tuna!) and 2 Units of healthy fat- (add some olive oil to make this salad even richer!) to make a completely balanced lunch. Enjoy!

Refreshing Cuke and Tomato Salad

Ingredients

  • 1/2 cup chopped English cucumber
  • 1/2 cup chopped tomato
  • 1 tbsp apple cider vinegar
  • sea salt
  • 1 tsp dill

Instructions

  1. Chop your cucumber and tomato and place in a tupperware.
  2. Add in your vinegar, sea salt, and dill and close up your container.
  3. Make sure the lid is on tight, and give it a really good shake to incorporate the ingredients.
  4. Either refrigerate it for a done for you meal prep snack, or enjoy some right now!
